Evoluzione is our late-disgorged, traditional-method Blanc de Blancs Nature collection. Its vintages tell the story of the research begun by Dr Edoardo in 1974.

Edoardo selected exceptional base wines from Alto Adige — aromatic complexity, minerality and structure — bottled them and left them to rest, without a predetermined release date.
Late disgorgement brings the character of long ageing into the glass. The bottles presented in this collection bear the Evoluzione label and have their own identity.
No dosage, no correction. Each vintage is a document in its own right: these sparkling wines have long ceased to resemble anything else.

Vintage 1985
Golden but unbowed: walnut, candied fruit, saffron and tobacco, evolving towards coffee and cocoa.
Vintage 1986
Mandarin and pepper on opening, then apple, nori seaweed, cumin, honey and liquorice. Vibrant and persistent on the palate.
Vintage 1987
Oyster, flowers and peach; a palate led by acidity, citrus and horseradish over a clean, dry finish.
Vintage 1988
Annurca apple, broom flowers, citrus and anise. A marine, vegetal taste with a long peppery close.
Vintage 1989
The sweetness of apple and pear, remarkable acid-saline balance, an energetic and citrussy palate.
Vintage 1990
A warmer profile: oyster, cumin, ginger, coconut; intense savouriness with almond, ripe fig and medlar.
