One hundred and twenty months of ageing in the very bottle in which the wine fermented. Ten years before the crown cap comes off.

Fermentation and ageing take place exclusively in the same bottle. The base wines come from Alto Adige, following the insight Paolo took from his father Edoardo.
Riddling is still done by hand, on wooden pupitres: every day a half-turn of the bottle, which is gradually tilted towards the vertical so that the lees gather in the neck. When the wine is clear it is disgorged, freezing the neck and expelling the deposit with nothing but the pressure of its own CO₂.
The dosage is kept to a minimum: what you drink is very nearly all of what ten years on the lees have built.
